The Gavi dei Gavi DOCG “Etichetta Nera” by La Scolca is the estate’s flagship wine, an undisputed symbol of Gavi and the purest expression of the Cortese grape. The grapes come from historic vineyards over 60 years old, where low yields ensure exceptional concentration. Deep-reaching roots draw nutrients from the subsoil, imparting elegance, minerality, and complexity to the wine. Crafted through a process refined over more than ninety vintages, it undergoes gentle pressing, temperature-controlled fermentation in stainless steel, and 6 months of lees aging, resulting in a white of great finesse. The bouquet reveals white flowers, grapefruit, almond, and flint, while the palate is structured yet harmonious, with vibrant freshness and a long, sapid, almond-tinged finish. Perfect with amberjack tartare, citrus risotto, white meat carpaccio, or light Asian cuisine.

Color: bright straw yellow with greenish reflections, the wine appears bright and vivid in the glass, anticipating the freshness that it releases on the sip.
Bouquet: intense fruity notes - grapefruit, citron, green apple - enriched by white flowers and delicate floral scents. Light mineral and flint hints also emerge, giving a pleasant persistence.
Taste: elegant and dry, with a vibrant and well-balanced acidity. The body is light but sufficiently sinuous, supported by a fresh, clean texture, and a long finish in which almond, hazelnut and a mineral-savoury aftertaste emerge.
