Susumaniello 'Susco' by San Marzano is produced in Salento in land of coastal origin. Susumaniello is a vine with an unfriendly temperament, which is why Susco means 'bashful' in the local dialect. Generous in his youth, as he gets older he becomes economical, if not stingy, in his yields. Due to its low productivity, it was set aside in the past and today re-evaluated in purity. Aging in French and American oak barriques for 6 months. Floral and fruity bouquet, spicy with delicate balsamic notes. Structured with a certain elegance, it reveals an interesting acid note and a good tasting persistence. Good tannic texture predisposes to aging in wood. The structure and acidic note pair well with succulent first and second courses, grilled meat and mature cheeses.
