Valpolicella Ripasso by Clementi is made in Marano valley, in which the company is located, located in the center of the classic Valpolicella, considered the most historic and voked area for cultivation. Since 2017 the family adheres to the 'RRR' protocol for complete eco-sustainability. It is vinified in September October and the grapes covered on the vinacs of Amarone in January. Set off in 30 hl oak barrels and then in barriques, always of oak, second passage, the next summer. Blend 65% Corvina and Corvinone, 30% Rondinella, 5% Molinara. It is particularly valuable for its persistence, its delicate aromas, for the hints of fruit, pear, cherry, marasca, vanilla, while the aromas of dried fruit and spices derive from the 'ripasso' process.
