Assyrtiko by Argyros Estate is made from the Greek vine of the same name, originally from the island of Santorini. The winemakers of Santorini have adapted to the extreme conditions of the volcanic island, growing their vines in baskets, wrapped around the plants, providing them with shelter from strong winds and drought. White with a strong acidity, typical of the variety and of the terroir, which allows it to age for long periods. It is fermented in both steel and wood to round off its acidity and therefore make it more harmonious. Citrus bouquet, with hints of lemon, pineapple and green apple. The marked acidity, good body, freshness and long persistence make it a perfect wine in combination with traditional Greek dishes, fish and white meats, crustaceans and molluscs.

THE COMPANY
Estate Argyros was founded in 1903 by Georgios Argyros, with a vineyard of only 5 hectares located in Santorini. Georgios produced his wines according to the traditional Santorini method and mainly sold them in the local market. In 1950 Estate Argyros passed to Matthew Argyros, who not only continued his father's business, but expanded the family vineyard to almost 7 hectares. The person who, however, most significantly changed the winery's image was the founder's grandson, Yiannis Argyros, who has been running it since 1974. Yiannis has not only extended the vineyard to the current 65 hectares, but has also worked hard to combine family tradition with modern technology and to ensure the high quality of the grapes. Matthew, the son of Yiannis, today represents the fourth generation of the Argyros family. Faithful to the principles of his ancestors, he combines tradition with innovation, working hard for the future of the company. The vineyard is located in Episkopi Gonia Thiras. The soil is volcanic and the vines are cultivated ungrafted. The Argyros winery has one of the oldest vineyards on the island: some parcels are more than 150 years old. Argyros Estate cultivates and vinifies only the indigenous varieties of Santorini, such as Assyrtiko, Athiri, Aidani, Mandilaria, Mavrathiro, Mavrotragano and Voudomato.
