Only pure Pinot Noir grapes are grown in the cool oceanic climate. Fermentation occurs with the intervention of only indigenous yeasts, with a portion of the grapes vinified as whole clusters. The 12-month aging in oak barrels gives it delicate smoky and spicy hints, without overwhelming the delicate notes of cherry, berries, and violet petals, enriched by hints of aromatic herbs and underbrush.
