Color: intense golden yellow crossed by amber reflections, witnesses of the structure of Pinot Noir.
Perlage: very fine, dense and persistent, a sign of a long maturation on the yeasts.
Bouquet: broad, deep and complex. It opens with hints of ripe red fruits, including cherry in alcohol and blackberry, followed by notes of candied orange peel, chestnut honey and gingerbread. Then emerge more evolved nuances of blond tobacco, toasted hazelnut and a hint of licorice, all supported by a chalky minerality typical of the Côte des Blancs, where Perrier-Jouët owns part of its vineyards.
Taste: broad, powerful but perfectly balanced. The attack is enveloping and structured, with a very fine tannic texture that recalls the nobility of Pinot Noir. The citrus freshness accompanies the development of the taste, while the creaminess of the perlage gives harmony to the progression.
