The period of bottle fermentation and subsequent aging on the lees lasts about 36 months. Fruity notes of currants, raspberries, and a citrus hint of grapefruit reveal soft traces of vanilla and almond. All of this is tied together by a classy mineral vein. Sapidity and softness coexist in great balance.
