The Sauvignon Blanc by Gilfenstein is grown in Alto Adige from vines trained using the Guyot system on clay and sandy soils at an altitude of 400 meters above sea level. Once fully ripe, the grapes are processed in a controlled atmosphere to preserve their vibrant aromatic profile. Fermentation takes place in temperature-controlled stainless steel tanks at 16°C, a low-temperature method that enhances both flavor and aroma.
The bouquet is fresh and captivating, offering notes of exotic fruit, citrus, aromatic herbs, and tomato leaf, with a subtle hint of flint in the background. On the palate, it is intense and savory, marked by vibrant acidity and a pleasantly bitter finish.
