Spumante Metodo Classico Riserva 'D’Antan' Millesimato 2013 by La Scolca is an author cuvée, made from only hand-selected Cortese grapes from the most suitable historic vineyards of Gavi. The vinification according to the Metodo Classico involves a long aging of over 120 months on the lees, followed by disgorging without dosage to express the maximum purity of the grape variety. On the nose, aromas of toasted hazelnut, citrus peel, acacia honey, and flint emerge, while the palate is vibrant, dry, and deeply mineral, with a very fine bubble and a persistent finish. Perfect when paired with oysters, raw seafood, caviar, author sushi, but also with aged cheeses and truffle dishes, to enhance its intensity and complexity. A reserve of rare elegance, for true connoisseurs.
