Schiava 'Römigberg' by Alois Lageder is the best enological excellence of the vineyards of the Dolomites. It comes from a Demeter certified organic and biodynamic viticulture, followed by a spontaneous fermentation of the crushed grapes, with different percentages of whole bunch, in steel and wood. Partly post-fermentation maceration with peels and stalks in large barrels and bottle aging for a few months. Discreet bouquet, fruity, aromatic, notes of red berries, plums and flint, medium-bodied floral, balanced, fresh and fruity, soft, delicate, dry, rich in tannins, spicy. Extremely flexible in culinary pairings.
