The Champagne Brut Nature “Les Hautes Chèvres” by Georges Laval is a refined 100% Pinot Meunier, sourced from old organically farmed vines in the Cumariot area of the Vallée de la Marne. Produced only in the best vintages, it begins with a meticulous hand-selection of the grapes. Alcoholic fermentation takes place in foudres, followed by 10 months of aging in oak barrels, 48 months on the lees, and an additional 3 to 6 months of bottle aging.
As a Brut Nature, no dosage is added, allowing the Champagne to express the pure character of its terroir, marked by minerality, tension, and depth. The result is an exceptional Blanc de Noirs, intense and vibrant, blending structure with finesse. Perfect for sophisticated tastings, it also pairs beautifully with seafood, shellfish, or aged cheeses.
