Spumante Metodo Classico Riserva 'D’Antan' Vintage 2009 by La Scolca is a cuvée of distinction, made from only hand-selected Cortese grapes from the most suitable historic vineyards of Gavi. The vinification according to the Classic Method involves a long aging of over 120 months on the lees, followed by disgorgement without dosage to express the maximum purity of the grape variety. On the nose, there are hints of toasted hazelnut, citrus peel, acacia honey, and flint, while the palate is vibrant, dry, and profoundly mineral, with a finest bubble and a persistent finish. Perfect paired with oysters, seafood crudo, caviar, gourmet sushi, but also with aged cheeses and truffle dishes, to enhance its intensity and complexity.
