The harvest is done manually in the evening hours, when the climate is cooler and the grape bunch retains its aromas. Only 3% ferments in French oak barrels. This results in a high-quality white wine, rich in fruit, freshness, and minerality, with pleasant and intoxicating aromas of fruit, especially lime, citrus zest, peach, and even orange blossoms.
