The Gibelè by Pellegrino is a still and dry wine, made from pure Zibibbo, which enhances the natural aromaticity of the grape variety in an elegant, contemporary, and territorial version. The grapes come from sandy and well-ventilated vineyards in western Sicily, where the microclimate favors aromatic maturation. The manual harvest at the end of August precedes a soft pressing, followed by fermentation in stainless steel at controlled temperature, to preserve intense aromas and varietal freshness. On the nose, there are prominent notes of orange blossoms, citrus flowers, white peach, and sage, while on the palate, the balance between savoriness, aromatic finesse, and citrus vivacity dominates, with a persistent and harmonious finish.
