Vajasindi estate: located on an ancient district - which dates back to the seventh / eighth century AD - the slopes of Etna. This area is characterized by small family-owned vineyards funds. Here generations of farmers, through hard work, have managed to obtain fertile ground by lava flows, transforming the hilly terrain Etna in high quality vineyards.

With an area of ​​about 8 hectares, the Vajasindi estate is divided into two areas of different altitudes. It is right on the terracing less wide - just over 2 hectares to 620 meters above sea level - that is the summer house. Testimony of a centuries-old history of ancient gestures and marked by summers spent working with passion the vines to produce precious grapes, from which arise wines of great personality.

Inside the villa a cellar-museum allows you to relive those moments: even today houses a wine press of the time, called "Chianca" (named originally given to large oaks coming from the mountains of San Domenico area).

This essential tool for farm work consists of a heavy pressing beam obtained from an oak tree, a nut with female lives in chestnut wood, and a worm in rowan wood to be screwed in the nut thanks to the action of arms of four men. The movement of the screw permit the pressing of the pomace arranged below the beam and carefully wrapped with the bands obtained by the intertwining of plant material.

The shade of the palm grove typical - typical of villas and rural buildings in the Etna area - occurred, however, the crushing of grapes to produce the wine, which was then placed in large tanks.
