'Essenza' by Macchiabuia is an Extra Virgin Olive Oil 100% Italian, cold extracted, only from varieties found in olive groves within the farm in Capalbio in the province of Grosseto. Multicultivar composed of Frantoio and Leccio del Corno olives. It presents a clean fruity of medium intensity, with clear notes of ripe fruit, of banana, with a final note that recalls the hints of musk. Extremely balanced and elegant taste, with a well balanced bitter and spicy, clear and finely persistent. Characterized by a particularly soft entry into the mouth. It is particularly suitable for accompanying low-acid dishes, with a round taste even if they do not disdain a bitter aftertaste. Perfect for soft and full-bodied cheeses or to finish the creaming of a creamy risotto. Perfect accompaniment of sweet-tasting vegetables, ideal seasoning for potatoes, carrots and onions fresh from the oven or for vegetable pies, even with particular flavors such as cabbage and pumpkin. But it is an oil that for its balance we can imagine well in an all-round use in the kitchen, for the palates that do not like.

In our olive groves we grow varieties such as the Frantoio, the Moraiolo the Leccino, Pendolino and Leccio del corno. The harvest is done strictly by hand, so that we can select the fruits of our plants one by one and keep their integrity and freshness intact. The passion for what we do is reflected in our oils, an extra virgin olive oil with an authentic flavor, of great character, which best expresses the terroir in which it is produced and the traditions of our family.
A few steps from the ancient village of Capalbio, in the heart of the Maremma, lies Macchiabuia, in that place where the wild coasts of the Tyrrhenian meet the gentle Tuscan hills. In summer a light mistral wind comes from the sea to caress the fronds of our olive groves, while in winter, the hills protect them from the cold winds that blow from the north. It is right here, on the extreme southern edge of Tuscany, where the nights are cool and the days are torrid, creating unique and favorable climatic conditions, the same that make Macchiabuia an authentic expression of the land from which it comes, drought, lapped and yet well sheltered from the brackish. The special composition of the soil, rich in red clay and largely stony, makes our soil one of the richest and mineral in the world, well drained and dry, and it is this superior terroir that gives our oil that intense and unmistakable flavor.
