THE OIL

Only in certain areas, and only by following a strict disciplinary and breeding and production techniques, an I.G.P. Toscano, of Protected Geographical Indication can be made. Macchiabuia I.G.P. is the authentic and pure expression of uncontaminated nature, it is an oil that transfers to nose, palate and mind the feelings of the place from which it comes.

Multicultivar composed of Frantoio, Moraiolo and Leccino olives. Intense aroma of oregano with a well-defined herbaceous finish. Remember the Mediterranean. Herbaceous taste with clear hints of bitter almond and oregano. A balanced bitterness and pungency. A spicy note of chilli on the finish.

An interesting extra virgin olive oil that impresses with the clarity of bitter notes and a very pleasant note of final chilli. It is proposed as a consistent oil for pairings with important meat dishes, perfect with pork and lamb of which it knows how to balance the sweet notes; Perfect on a tomato salad and a must try on aged cheeses.

THE CULTIVAR

The olive trees grow on coastal hills of red earth, heated by the sun and reached by sea breezes. The oils of Macchiabuia transmit at each tasting the extraordinary qualities of the unique terroir of the Maremma and its close link with nature. In our olive groves we grow varieties such as the Frantoio, the Moraiolo the Leccino, Pendolino and Leccio del corno. The harvest is done strictly by hand, so that we can select the fruits of our plants one by one and keep their integrity and freshness intact. The passion for what we do is reflected in our oils, an extra virgin olive oil with an authentic flavor, of great character, which best expresses the terroir in which it is produced and the traditions of our family.

THE COMPANY

A few steps from the ancient village of Capalbio, in the heart of the Maremma, lies Macchiabuia, in that place where the wild coasts of the Tyrrhenian meet the gentle Tuscan hills. In summer a light mistral wind comes from the sea to caress the fronds of our olive groves, while in winter, the hills protect them from the cold winds that blow from the north. It is right here, on the extreme southern edge of Tuscany, where the nights are cool and the days are torrid, creating unique and favorable climatic conditions, the same that make Macchiabuia an authentic expression of the land from which it comes, drought, lapped and yet well sheltered from the brackish. The special composition of the soil, rich in red clay and largely stony, makes our soil one of the richest and mineral in the world, well drained and dry, and it is this superior terroir that gives our oil that intense and unmistakable flavor.
