In the hands of the Seale family for four generations, the Foursquare Rum Distillery is the most technologically advanced distillery in the Caribbean, and this without distorting the authenticity of the Rum it produces. Reginald Leon Seale is the name of one of the oldest Rum producers in Barbados: a family business passed from father to son and started in 1820. Today Richard Seale is the master distiller and owner of the Foursquare Distillery, and with him the distillery has had a radical modernization. Starting from molasses coming almost exclusively from Guyana, Foursquare sees the fermentation process take place in two phases: first the yeasts are initially multiplied in a small steel tank, and then they are added to the molasses which begin to ferment producing alcohol. Subsequently, for the fermentation we use two different stills: a discontinuous still and a continuous traditional still, both adapted over time with new technologies, so that the continuous still allows pressure control so as to have a better separation of the components. alcoholic of head, heart, tail. In the discontinuous still, however, a modification was made to reduce the sulphites resulting from the distillation of molasses. Both stills work under vacuum, reducing the temperature required for boiling and thus avoiding "overcooking" the Rum and imparting unnatural aromas. All Foursquare Rums contain no sugars and are distilled and bottled in Barbados. Richard Seale in this regard defines himself as a guardian of Rum, who has always stood up against adulteration, the use of sugar and industrial multi-women. The distillery was designed to be energy efficient and has the most advanced recycling and waste disposal system on the island. The Foursquare Rum Distillery is known for the creation of Single Blended Rum composed of a blend of Rums distilled with the pot still and with a column still within the same distillery. Great attention is paid to aging and some Rumi carry out the “double aging” process, or age in previously used barrels, such as the “Port Cask Finish” Rum or the “Zinfandel Cask Blend”.
Rum Barbados '14 Years Old' by Foursquare comes from the Barbados islands and was distilled in 2005 and bottled in 2019 in Barrel n. 80. Rum with an intense dark amber color. Bouquet of cinnamon, nutmeg and the smell of dry heather. On the palate it is characterized by aromas of sweet wood, Greek raisins and turmeric. Pleasantly citrusy finish. Limited edition of only 387 bottles.
